3-Ingredient Potluck Chicken (Easy, Crowd-Pleasing Recipe)

This simple chicken dish is great for potlucks because it requires minimal ingredients, little preparation, and works well for a crowd.

Ingredients

  • 2–3 pounds (1–1.5 kg) chicken thighs or chicken breasts
  • 1 cup salsa (mild or spicy, your choice)
  • 1 packet taco seasoning (or about 2–3 tablespoons homemade taco seasoning)

Instructions

  1. Prepare the chicken: Place chicken in a slow cooker or baking dish.
  2. Add flavor: Sprinkle taco seasoning over the chicken and pour salsa on top.
  3. Cook:
    • Slow cooker: Cook on low for 5–6 hours or high for 2–3 hours, until the chicken is tender and cooked through.
    • Oven: Bake covered at 375°F (190°C) for about 35–45 minutes, depending on the thickness of the chicken.
  4. Shred or serve whole: Shred the chicken with forks and mix it with the sauce, or serve pieces as they are.

Potluck Serving Ideas

  • Serve in tortillas for easy chicken tacos
  • Add to rice bowls
  • Top with cheese, lettuce, avocado, or sour cream
  • Keep warm in a slow cooker for serving

Tips

  • Chicken thighs usually stay juicier for long cooking.
  • Choose a salsa flavor you enjoy—the salsa provides most of the dish’s taste.
  • Add optional toppings if you want to dress it up, but the 3 main ingredients are enough for a flavorful meal.
