Creamy Old-Fashioned Potato Casserole
A comforting family favorite with tender potatoes in a rich, creamy sauce topped with melted cheese. It’s easy to make and perfect as a side dish or light main course.
Ingredients
- 2 lb (900 g) potatoes, peeled and thinly sliced
- 1 small onion, finely chopped
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 can (10.5 oz / 300 g) cream of mushroom or cream of chicken soup
- 1/2 cup milk
- 2 tablespoons butter, melted
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- Chopped fresh parsley, for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch (23×33 cm) baking dish.
- In a large bowl, combine the soup, sour cream, milk, melted butter, garlic powder, paprika, salt, and pepper.
- Stir in the chopped onion and half of the shredded cheese.
- Fold the sliced potatoes into the mixture until evenly coated.
- Transfer everything to the prepared baking dish and spread into an even layer.
- Cover with foil and bake for 60 minutes.
- Remove the foil, sprinkle the remaining cheese over the top, and bake for 15–20 minutes more, or until the potatoes are tender and the cheese is golden and bubbly.
- Let the casserole rest for 10 minutes before serving. Garnish with parsley if desired.
Tips
- Add cooked bacon or diced ham for a heartier version.
- A pinch of thyme or rosemary adds extra flavor.
- Leftovers reheat well and can be refrigerated for up to 3 days.
