Creamy Old-Fashioned Potato Casserole

A comforting family favorite with tender potatoes in a rich, creamy sauce topped with melted cheese. It’s easy to make and perfect as a side dish or light main course.

Ingredients

  • 2 lb (900 g) potatoes, peeled and thinly sliced
  • 1 small onion, finely chopped
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can (10.5 oz / 300 g) cream of mushroom or cream of chicken soup
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch (23×33 cm) baking dish.
  2. In a large bowl, combine the soup, sour cream, milk, melted butter, garlic powder, paprika, salt, and pepper.
  3. Stir in the chopped onion and half of the shredded cheese.
  4. Fold the sliced potatoes into the mixture until evenly coated.
  5. Transfer everything to the prepared baking dish and spread into an even layer.
  6. Cover with foil and bake for 60 minutes.
  7. Remove the foil, sprinkle the remaining cheese over the top, and bake for 15–20 minutes more, or until the potatoes are tender and the cheese is golden and bubbly.
  8. Let the casserole rest for 10 minutes before serving. Garnish with parsley if desired.

Tips

  • Add cooked bacon or diced ham for a heartier version.
  • A pinch of thyme or rosemary adds extra flavor.
  • Leftovers reheat well and can be refrigerated for up to 3 days.
