A comforting, crispy baked dish made with tender potatoes, savory corned beef, and sweet onions. It’s perfect for breakfast, brunch, or an easy dinner.

Ingredients

  • 2 cups cooked corned beef, chopped or shredded
  • 4 medium potatoes, peeled and diced into small cubes
  • 1 large onion, finely chopped
  • 2 tablespoons butter or olive oil
  • 2 cloves garlic, minced (optional)
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (optional, for extra flavor)
  • 2 tablespoons chopped fresh parsley (optional)
  • 2–4 eggs (optional, for topping)

Instructions

1. Prepare the potatoes

  1. Heat oven to 400°F (200°C).
  2. Place diced potatoes in a pot of salted water and simmer for about 5–8 minutes until slightly softened.
  3. Drain well.

2. Cook the onion mixture

  1. Heat butter or oil in a skillet over medium heat.
  2. Add onions and cook until softened and lightly golden, about 5 minutes.
  3. Add garlic (if using) and cook for another 30 seconds.

3. Combine the hash

  1. In a large bowl, mix together:
    • Cooked potatoes
    • Corned beef
    • Cooked onions
    • Salt, pepper, and paprika
  2. Spread the mixture evenly in a lightly greased baking dish.

4. Bake

  1. Bake uncovered for 25–35 minutes until the top is golden and crispy.
  2. For extra crispiness, stir once halfway through baking.

5. Optional egg topping

  • Make small wells in the hash during the last 10 minutes of baking.
  • Crack eggs into the wells and return to the oven until the eggs are cooked to your preference.

  • Pickles or a spoonful of mustard
