Baked Corned Beef Hash Recipe 🥔🥩
A comforting, crispy baked dish made with tender potatoes, savory corned beef, and sweet onions. It’s perfect for breakfast, brunch, or an easy dinner.
Ingredients
- 2 cups cooked corned beef, chopped or shredded
- 4 medium potatoes, peeled and diced into small cubes
- 1 large onion, finely chopped
- 2 tablespoons butter or olive oil
- 2 cloves garlic, minced (optional)
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 teaspoon paprika (optional, for extra flavor)
- 2 tablespoons chopped fresh parsley (optional)
- 2–4 eggs (optional, for topping)
Instructions
1. Prepare the potatoes
- Heat oven to 400°F (200°C).
- Place diced potatoes in a pot of salted water and simmer for about 5–8 minutes until slightly softened.
- Drain well.
2. Cook the onion mixture
- Heat butter or oil in a skillet over medium heat.
- Add onions and cook until softened and lightly golden, about 5 minutes.
- Add garlic (if using) and cook for another 30 seconds.
3. Combine the hash
- In a large bowl, mix together:
- Cooked potatoes
- Corned beef
- Cooked onions
- Salt, pepper, and paprika
- Spread the mixture evenly in a lightly greased baking dish.
4. Bake
- Bake uncovered for 25–35 minutes until the top is golden and crispy.
- For extra crispiness, stir once halfway through baking.
5. Optional egg topping
- Make small wells in the hash during the last 10 minutes of baking.
- Crack eggs into the wells and return to the oven until the eggs are cooked to your preference.
