Banana Bread Cake with Cream Cheese Frosting
A soft, moist banana cake topped with rich cream cheese frosting is a delicious way to use ripe bananas. It has the comfort of banana bread with the texture of a cake.
Ingredients
For the banana cake:
- 3 ripe bananas, mashed
- ½ cup (115 g) unsalted butter, softened
- ¾ cup sugar (adjust to taste)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup plain yogurt or sour cream
- ½ teaspoon cinnamon (optional)
For the cream cheese frosting:
- 8 oz (225 g) cream cheese, softened
- ½ cup (115 g) unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Prepare the oven
- Heat oven to 175°C (350°F).
- Grease and line an 8×8-inch or similar baking pan.
- Make the batter
- Beat butter and sugar until creamy.
- Add eggs one at a time, then mix in vanilla.
- Stir in mashed bananas and yogurt.
- In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
- Add dry ingredients to wet ingredients and mix just until combined.
- Bake
- Pour batter into the pan.
- Bake for about 35–45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool completely before frosting.
- Make the frosting
- Beat cream cheese and butter until smooth.
- Add powdered sugar gradually.
- Mix in vanilla until creamy.
- Finish
- Spread frosting over the cooled banana cake.
- Slice and serve.
Optional additions
- Chopped walnuts or pecans
- Chocolate chips
- A sprinkle of cinnamon on top
- A drizzle of caramel sauce
Store covered in the refrigerator because of the cream cheese frosting. It’s often even better the next day after the flavors settle.
