Banana Bread Cake with Cream Cheese Frosting

A soft, moist banana cake topped with rich cream cheese frosting is a delicious way to use ripe bananas. It has the comfort of banana bread with the texture of a cake.

Ingredients

For the banana cake:

  • 3 ripe bananas, mashed
  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup sugar (adjust to taste)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup plain yogurt or sour cream
  • ½ teaspoon cinnamon (optional)

For the cream cheese frosting:

  • 8 oz (225 g) cream cheese, softened
  • ½ cup (115 g) unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the oven
    • Heat oven to 175°C (350°F).
    • Grease and line an 8×8-inch or similar baking pan.
  2. Make the batter
    • Beat butter and sugar until creamy.
    • Add eggs one at a time, then mix in vanilla.
    • Stir in mashed bananas and yogurt.
    • In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
    • Add dry ingredients to wet ingredients and mix just until combined.
  3. Bake
    • Pour batter into the pan.
    • Bake for about 35–45 minutes, or until a toothpick inserted in the center comes out clean.
    • Cool completely before frosting.
  4. Make the frosting
    • Beat cream cheese and butter until smooth.
    • Add powdered sugar gradually.
    • Mix in vanilla until creamy.
  5. Finish
    • Spread frosting over the cooled banana cake.
    • Slice and serve.

Optional additions

  • Chopped walnuts or pecans
  • Chocolate chips
  • A sprinkle of cinnamon on top
  • A drizzle of caramel sauce

Store covered in the refrigerator because of the cream cheese frosting. It’s often even better the next day after the flavors settle.
