Here’s a simple 4-Ingredient Slow Cooker Smothered Beef (Sirloin Tip Roast) recipe.

Ingredients

  • 2½–3 lb (1.1–1.4 kg) sirloin tip roast
  • 1 packet (about 1 oz/28 g) onion soup mix
  • 1 can (10.5 oz/300 g) condensed cream of mushroom soup
  • ½ cup (120 mL) beef broth

Instructions

  1. Place the sirloin tip roast in the slow cooker.
  2. In a bowl, whisk together the onion soup mix, cream of mushroom soup, and beef broth.
  3. Pour the mixture over the roast, coating it well.
  4. Cover and cook:
    • Low: 8–10 hours (recommended for the most tender meat)
    • High: 4–6 hours
  5. Remove the roast and let it rest for about 10 minutes before slicing or shredding.
  6. Stir the sauce in the slow cooker. If you’d like it thicker, whisk 1 tablespoon cornstarch with 2 tablespoons cold water, stir it into the sauce, and cook on High for another 10–15 minutes.
