Marinated cucumber salad

🥒 Marinated Cucumber Salad

A simple, crisp, tangy salad that’s excellent as a side dish. A basic vinegar-and-dill version can be prepared in minutes and chilled before serving. (Bon Appétit)

Ingredients

  • 2–3 medium cucumbers, thinly sliced
  • ½ small red onion, thinly sliced
  • ¼ cup white or white-wine vinegar
  • 2 tablespoons water
  • 1 tablespoon olive oil
  • 1–2 tablespoons fresh dill, chopped
  • 1 teaspoon sugar or honey
  • ½ teaspoon salt
  • Black pepper, to taste

Directions

  1. Slice the cucumbers and onion thinly.
  2. Whisk together vinegar, water, olive oil, sugar, salt and pepper.
  3. Add the cucumbers, onion and dill and toss well.
  4. Cover and refrigerate for at least 30 minutes; letting it marinate longer gives the flavors more time to develop. (Kitchn)
  5. Taste before serving and adjust the salt, pepper or vinegar.

Tip: For extra-crisp cucumbers, lightly salt the slices first, let them sit for about 15–30 minutes, then drain excess liquid before adding the dressing. (Bon Appétit)
