🥒 Marinated Cucumber Salad
A simple, crisp, tangy salad that’s excellent as a side dish. A basic vinegar-and-dill version can be prepared in minutes and chilled before serving. (Bon Appétit)
Ingredients
- 2–3 medium cucumbers, thinly sliced
- ½ small red onion, thinly sliced
- ¼ cup white or white-wine vinegar
- 2 tablespoons water
- 1 tablespoon olive oil
- 1–2 tablespoons fresh dill, chopped
- 1 teaspoon sugar or honey
- ½ teaspoon salt
- Black pepper, to taste
Directions
- Slice the cucumbers and onion thinly.
- Whisk together vinegar, water, olive oil, sugar, salt and pepper.
- Add the cucumbers, onion and dill and toss well.
- Cover and refrigerate for at least 30 minutes; letting it marinate longer gives the flavors more time to develop. (Kitchn)
- Taste before serving and adjust the salt, pepper or vinegar.
Tip: For extra-crisp cucumbers, lightly salt the slices first, let them sit for about 15–30 minutes, then drain excess liquid before adding the dressing. (Bon Appétit)
