Ingredients (4–6 servings)

  • 500 g boneless, skinless chicken breast
  • 6 cups chicken broth
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 cups broccoli florets
  • 1 cup cauliflower florets
  • 2 celery stalks, sliced
  • ½ bell pepper, diced
  • 2 tbsp lemon juice
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the onion, garlic, and ginger for 2–3 minutes until fragrant.
  3. Add the celery, bell pepper, broccoli, and cauliflower. Cook for about 5 minutes.
  4. Pour in the chicken broth and add the chicken breast.
  5. Bring to a simmer and cook for about 20 minutes, until the chicken is cooked through.
  6. Remove the chicken, shred it with two forks, and return it to the pot.
  7. Simmer for another 5 minutes.
  8. Stir in the lemon juice, season to taste, and serve.

💡 A note on “detox”

Despite the name, there’s no scientific evidence that a specific soup “detoxifies” your body. Your liver and kidneys already perform detoxification. However, a soup like this can be a nutritious, low-carb meal because it’s rich in vegetables, protein, and fluids.
