Washboard Cookies 🍪
Ingredients
- 1 cup (225 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2½ cups (315 g) all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
Optional topping
- 2–3 tablespoons granulated sugar for sprinkling
Instructions
- Prepare the oven
- Preheat oven to 175°C (350°F).
- Line a baking sheet with parchment paper.
- Make the dough
- Cream the softened butter and sugar together until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, mix flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture until a soft dough forms.
- Shape the cookies
- Roll dough into small logs or shape into small rectangular pieces.
- Place on the baking sheet.
- Use a fork to press lines across the top of each cookie to create the classic washboard ridges.
- Sprinkle lightly with sugar if desired.
- Bake
- Bake for 12–15 minutes, or until the edges are lightly golden.
- Cool
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
Tips for the best Washboard Cookies
- Chill the dough for 20–30 minutes if it feels too soft.
- Don’t overbake if you prefer a tender cookie.
- For extra flavor, add a little lemon zest or replace some vanilla with almond extract.
- Store in an airtight container for up to a week.
