Homemade Crunch Bars
Ingredients
- 2 cups (340 g) milk or semisweet chocolate chips
- 1 tablespoon coconut oil or butter (optional, for a smoother texture)
- 1½ cups crispy rice cereal
Instructions
- Line an 8-inch (20 cm) square pan or loaf pan with parchment paper.
- Melt the chocolate (and coconut oil, if using) in the microwave in 20-second intervals, stirring between each, or use a double boiler.
- Fold the crispy rice cereal into the melted chocolate until evenly coated.
- Spread the mixture into the prepared pan and press it into an even layer.
- Refrigerate for 1–2 hours, or until firm.
- Lift out of the pan and cut into bars or squares.
Optional variations
- Add 1 teaspoon vanilla extract.
- Sprinkle a pinch of sea salt on top.
- Mix in chopped roasted peanuts or almonds.
- Use dark, milk, or white chocolate—or a combination.
Store the bars in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months.
