Homemade Crunch Bars

Here’s an easy recipe for homemade crunch bars with just a few ingredients.

Ingredients

  • 2 cups (340 g) milk or semisweet chocolate chips
  • 1 tablespoon coconut oil or butter (optional, for a smoother texture)
  • 1½ cups crispy rice cereal

Instructions

  1. Line an 8-inch (20 cm) square pan or loaf pan with parchment paper.
  2. Melt the chocolate (and coconut oil, if using) in the microwave in 20-second intervals, stirring between each, or use a double boiler.
  3. Fold the crispy rice cereal into the melted chocolate until evenly coated.
  4. Spread the mixture into the prepared pan and press it into an even layer.
  5. Refrigerate for 1–2 hours, or until firm.
  6. Lift out of the pan and cut into bars or squares.

Optional variations

  • Add 1 teaspoon vanilla extract.
  • Sprinkle a pinch of sea salt on top.
  • Mix in chopped roasted peanuts or almonds.
  • Use dark, milk, or white chocolate—or a combination.

Store the bars in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months.
