🥔 Slow Cooker Golden Potatoes & Caramelized Onions
Tender potatoes, sweet caramelized onions, and buttery seasoning make this an easy side dish for roast chicken, beef, or pork.
Ingredients
2 lb (900 g) Yukon Gold or other yellow potatoes
2 large onions, thinly sliced
3 tbsp butter
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp dried thyme
½ cup (120 ml) chicken or vegetable broth
½ cup shredded Parmesan, optional
2 tbsp chopped fresh parsley, optional
Instructions
Slice the vegetables: Wash the potatoes and slice them about ¼ inch (6 mm) thick. Thinly slice the onions.
Layer the slow cooker: Lightly grease the cooker. Add a layer of potatoes, followed by onions. Continue layering until everything is used.
Season: Sprinkle each layer lightly with salt, pepper, garlic powder, and thyme.
Add the liquids: Drizzle with olive oil and scatter the butter over the top. Pour the broth around the edges.
Cook: Cover and cook on LOW for 5–6 hours or HIGH for 2½–3½ hours, until the potatoes are fork-tender.
Brown the top: For a more golden finish, transfer the cooked potatoes and onions to an oven-safe dish and broil for 3–5 minutes, watching carefully.
Finish: Sprinkle with Parmesan and parsley if desired.
For especially sweet, caramelized onions
For deeper flavor, cook the onions in a skillet with a little butter and oil over medium-low heat for 15–20 minutes before putting them in the slow cooker. They’ll develop a much richer caramelized flavor.
Tip: Avoid stirring the potatoes repeatedly during cooking—they can become fragile and break apart.
