Ingredients

  • 2 medium cucumbers, thinly sliced
  • 2–3 ripe tomatoes, cut into wedges or chunks
  • 1 small red or white onion, thinly sliced
  • ¼ cup white vinegar or apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon sugar (optional, to balance acidity)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • 1 teaspoon dried oregano or Italian seasoning (optional)
  • 2 tablespoons chopped fresh parsley or dill (optional)

Instructions

  1. Combine the cucumbers, tomatoes, and onion in a large bowl.
  2. In a separate bowl or jar, whisk together the vinegar, olive oil, sugar, salt, pepper, and herbs.
  3. Pour the dressing over the vegetables and toss gently to coat.
  4. Cover and refrigerate for at least 30 minutes. For the best flavor, marinate for 2–4 hours, stirring once or twice.
  5. Serve chilled with a slotted spoon or include some of the marinade as a dressing.
