Ingredients
For the filling:
- 2 boxes (3.4 oz each) instant vanilla pudding mix
- 3 cups cold milk
- 1 container (8 oz) whipped topping, thawed
- 1 box graham crackers (about 14–16 oz)
For the chocolate topping:
- 1½ cups chocolate chips
- ¾ cup heavy cream
- 1 tablespoon butter
- 1 teaspoon vanilla extract (optional)
Instructions
- Make the filling
- Whisk pudding mix and cold milk together until thickened (about 2 minutes).
- Fold in the whipped topping until smooth and creamy.
- Layer the cake
- In a 9×13-inch baking dish, place a layer of graham crackers.
- Spread half of the pudding mixture over the crackers.
- Add another layer of graham crackers.
- Spread the remaining filling on top.
- Finish with a final layer of graham crackers.
- Add the chocolate topping
- Heat heavy cream until warm (not boiling).
- Pour over chocolate chips and let sit for 1–2 minutes.
- Stir until smooth, then mix in butter and vanilla.
- Spread over the top layer of crackers.
- Chill
- Cover and refrigerate for at least 6 hours, preferably overnight.
- The graham crackers soften and create a cake-like texture.
Optional variations
- Add sliced strawberries or bananas between layers.
- Use chocolate graham crackers for a richer flavor.
- Sprinkle chopped nuts or chocolate shavings on top.
- Use chocolate pudding instead of vanilla for a double-chocolate version.
