No-Bake Chocolate Eclair CakeA classic easy dessert that tastes like a chocolate éclair but requires no oven. It’s made with layers of graham crackers, creamy vanilla filling, and a rich chocolate topping.

Ingredients

For the filling:

  • 2 boxes (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 container (8 oz) whipped topping, thawed
  • 1 box graham crackers (about 14–16 oz)

For the chocolate topping:

  • 1½ cups chocolate chips
  • ¾ cup heavy cream
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Make the filling
    • Whisk pudding mix and cold milk together until thickened (about 2 minutes).
    • Fold in the whipped topping until smooth and creamy.
  2. Layer the cake
    • In a 9×13-inch baking dish, place a layer of graham crackers.
    • Spread half of the pudding mixture over the crackers.
    • Add another layer of graham crackers.
    • Spread the remaining filling on top.
    • Finish with a final layer of graham crackers.
  3. Add the chocolate topping
    • Heat heavy cream until warm (not boiling).
    • Pour over chocolate chips and let sit for 1–2 minutes.
    • Stir until smooth, then mix in butter and vanilla.
    • Spread over the top layer of crackers.
  4. Chill
    • Cover and refrigerate for at least 6 hours, preferably overnight.
    • The graham crackers soften and create a cake-like texture.

Optional variations

  • Add sliced strawberries or bananas between layers.
  • Use chocolate graham crackers for a richer flavor.
  • Sprinkle chopped nuts or chocolate shavings on top.
  • Use chocolate pudding instead of vanilla for a double-chocolate version.

Tip: This dessert is best made the day before serving—the longer it chills, the more the layers blend together like a real éclair.
