Marinated Cucumber, Tomato & Onion Salad
A crisp, tangy salad that works well as a side dish or a light lunch.
Ingredients
2 large cucumbers, thinly sliced
2–3 ripe tomatoes, chopped
½ medium red or yellow onion, thinly sliced
3 tablespoons olive oil
2 tablespoons apple cider vinegar or red-wine vinegar
1 teaspoon honey or sugar, optional
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon fresh parsley or dill, chopped
1 small garlic clove, minced, optional
Instructions
Prepare the vegetables: Slice the cucumbers and onion and chop the tomatoes. Place everything in a large bowl.
Make the marinade: Whisk together the olive oil, vinegar, honey, salt, pepper, herbs, and garlic.
Combine: Pour the dressing over the vegetables and gently toss.
Marinate: Cover and refrigerate for 30 minutes to 2 hours. Toss once or twice while it rests.
Serve: Taste and adjust the salt, vinegar, or pepper just before serving.
Tip
For a less watery salad, lightly salt the sliced cucumbers and let them sit for about 10–15 minutes, then drain before adding the dressing. This helps keep the salad crisp.
For extra flavor, add feta cheese, olives, avocado, or a little fresh dill.
