🍍 Easiest Pineapple Cake
A simple, moist cake made with pantry staples and canned pineapple—no mixer required!
Ingredients
1 can (20 oz) crushed pineapple, undrained
2 cups all-purpose flour
1½ cups sugar
2 large eggs
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ cup chopped pecans or walnuts (optional)
Instructions
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
In a large bowl, whisk together the eggs, sugar, vanilla, and crushed pineapple with its juice.
Add flour, baking soda, and salt. Stir just until combined. Fold in nuts if using.
Pour into the prepared pan.
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Cool before slicing.
🍰 Easy Cream Cheese Frosting
Beat together:
8 oz softened cream cheese
½ cup softened butter
2 cups powdered sugar
1 teaspoon vanilla
Spread over the cooled cake and enjoy!
Tip: Don’t drain the pineapple—the juice is what helps make this cake wonderfully moist.
