Crispy Roasted Cauliflower Recipe

Crispy Roasted Cauliflower – Better Than Meat! is a popular plant-based recipe idea where cauliflower is seasoned and roasted until it becomes golden, crispy, and full of flavor. It can be a satisfying alternative to meat because it has a hearty texture and absorbs spices well.

Crispy Roasted Cauliflower Recipe

Ingredients

  • 1 large cauliflower head, cut into florets
  • 2–3 tablespoons olive oil
  • 2 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon turmeric (optional)
  • ½ teaspoon black pepper
  • ¾ teaspoon salt (adjust to taste)
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1–2 tablespoons breadcrumbs (optional for extra crunch)
  • Fresh parsley or coriander for garnish
  • Lemon wedges for serving

Instructions

  1. Prepare the cauliflower
    • Wash and dry the cauliflower well.
    • Cut into bite-sized florets. Drying helps them become crispier.
  2. Season
    • Toss cauliflower with olive oil, garlic, spices, salt, and pepper.
    • Add Parmesan or breadcrumbs if using.
  3. Roast
    • Spread florets on a baking tray in a single layer.
    • Roast at 220°C (425°F) for about 25–35 minutes, turning halfway through.
    • Roast until the edges are browned and crispy.
  4. Finish
    • Sprinkle with fresh herbs and a squeeze of lemon juice.
    • Serve with yogurt sauce, tahini sauce, or a spicy dip.

Tips for extra crispiness

  • Do not overcrowd the baking tray.
  • Use high heat.
  • Dry the cauliflower before seasoning.
  • Add a small amount of cornstarch or rice flour to the coating for a crunchier crust.

It works well as:

  • A main vegetarian dish with rice or flatbread
  • A side dish
  • A filling for wraps and sandwiches

The “better than meat” claim is mostly about taste and texture preference—cauliflower does not replace meat nutritionally (especially protein), but it can be a delicious, filling plant-based option.
