Easy Southern Hoecakes Recipe

Hoecakes are a simple Southern cornmeal pancake, crispy on the outside and tender inside. They’re great with butter, honey, syrup, or alongside savory dishes.

Ingredients

  • 1 cup cornmeal (fine or medium grind)
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar (optional)
  • 1 cup buttermilk (add a little more if needed)
  • 1 large egg
  • 2 tablespoons melted butter or oil
  • Oil or bacon grease for frying

Instructions

  1. In a bowl, mix cornmeal, flour, baking powder, salt, and sugar.
  2. Add buttermilk, egg, and melted butter. Stir until you have a thick batter (similar to pancake batter).
  3. Heat a skillet or griddle over medium heat and lightly grease it.
  4. Drop spoonfuls of batter onto the hot skillet and flatten slightly.
  5. Cook for about 2–3 minutes per side, until golden brown and crispy.
  6. Serve warm with butter, honey, maple syrup, or your favorite toppings.

Tip: For extra crispy edges and traditional flavor, cook them in a cast-iron skillet with a little bacon grease.
