Ingredients
- 2 cups cooked chicken (shredded or finely chopped)
- 2 medium carrots, peeled and chopped
- 2 tbsp butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 3–4 tbsp cream cheese (or thick yogurt for a lighter version)
- 2–3 tbsp mayonnaise (optional, for extra creaminess)
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
- ¼ tsp paprika or mild chili powder
- 1 tbsp lemon juice
- 1–2 tbsp fresh parsley or coriander, chopped
Method
- Boil or steam the carrots until very soft. Drain well.
- Melt butter in a pan and gently cook the onion until soft and golden. Add garlic and cook for another 30 seconds.
- Add chicken and carrots to the pan and warm everything together for a few minutes.
- Blend the mixture in a food processor until smooth (or keep it slightly chunky for a rustic pâté).
