Grandma’s Secret Spread: Creamy Chicken & Carrot Pâté

Ingredients

  • 2 cups cooked chicken (shredded or finely chopped)
  • 2 medium carrots, peeled and chopped
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3–4 tbsp cream cheese (or thick yogurt for a lighter version)
  • 2–3 tbsp mayonnaise (optional, for extra creaminess)
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ¼ tsp paprika or mild chili powder
  • 1 tbsp lemon juice
  • 1–2 tbsp fresh parsley or coriander, chopped

Method

  1. Boil or steam the carrots until very soft. Drain well.
  2. Melt butter in a pan and gently cook the onion until soft and golden. Add garlic and cook for another 30 seconds.
  3. Add chicken and carrots to the pan and warm everything together for a few minutes.
  4. Blend the mixture in a food processor until smooth (or keep it slightly chunky for a rustic pâté).
  5. Mix in cream cheese, mayonnaise, lemon juice, salt, pepper, and paprika.
  6. Chill for at least 1 hour so the flavors come together.
  7. Serve spread on toast, crackers, cucumber slices, or warm bread.

Grandma’s touch: A tiny pinch of nutmeg or a spoonful of softened butter blended in at the end gives it that old-fashioned, comforting flavor. It keeps well in the refrigerator for about 3–4 days in a sealed container.
