  • 1 tsp dried thyme or Italian seasoning
  • Salt to taste
  • Juice of ½ lemon
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the onion for 4–5 minutes until softened.
  3. Add the garlic and ginger; cook for 1 minute.
  4. Stir in the carrots, celery, turmeric, black pepper, and thyme.
  5. Add the zucchini, broccoli, cabbage, tomatoes (if using), and vegetable broth.
  6. Bring to a boil, then reduce the heat and simmer for 20–25 minutes, until the vegetables are tender.
  7. Stir in the lemon juice and adjust the seasoning with salt and pepper.
  8. Garnish with fresh parsley and serve warm.
