Southern 4-Ingredient Cucumber Sandwiches

A classic Southern cucumber sandwich is simple, cool, and refreshing—perfect for afternoon tea, picnics, or a light lunch.

Ingredients

  • 1 large cucumber, thinly sliced
  • 8 slices soft white sandwich bread (or your favorite bread)
  • 4 oz (about ½ cup) cream cheese, softened
  • Salt and black pepper, to taste

Instructions

  1. Prepare the cucumber
    • Slice the cucumber very thinly.
    • Sprinkle lightly with salt and let sit for about 10–15 minutes.
    • Pat dry with paper towels to remove excess moisture (this helps prevent soggy sandwiches).
  2. Spread the cream cheese
    • Spread softened cream cheese evenly on each slice of bread.
  3. Add cucumber
    • Layer cucumber slices over half of the bread slices.
    • Season lightly with pepper.
  4. Assemble and serve
    • Top with the remaining bread slices.
    • Trim crusts if desired and cut into halves or small triangles.

Optional Southern-style additions (if you want more flavor)

  • A sprinkle of dill or fresh herbs
  • A dash of garlic powder
  • A little mayonnaise mixed with the cream cheese
