Southern 4-Ingredient Cucumber Sandwiches
A classic Southern cucumber sandwich is simple, cool, and refreshing—perfect for afternoon tea, picnics, or a light lunch.
Ingredients
- 1 large cucumber, thinly sliced
- 8 slices soft white sandwich bread (or your favorite bread)
- 4 oz (about ½ cup) cream cheese, softened
- Salt and black pepper, to taste
Instructions
- Prepare the cucumber
- Slice the cucumber very thinly.
- Sprinkle lightly with salt and let sit for about 10–15 minutes.
- Pat dry with paper towels to remove excess moisture (this helps prevent soggy sandwiches).
- Spread the cream cheese
- Spread softened cream cheese evenly on each slice of bread.
- Add cucumber
- Layer cucumber slices over half of the bread slices.
- Season lightly with pepper.
- Assemble and serve
- Top with the remaining bread slices.
- Trim crusts if desired and cut into halves or small triangles.
