Cowboy Cookies Recipe

Ingredients

  • 1 cup (225 g) unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 cups rolled oats
  • 1½ cups chocolate chips
  • 1 cup shredded coconut
  • 1 cup chopped pecans or walnuts

Instructions

  1. Preheat oven to 180°C (350°F). Line baking trays with baking paper.
  2. Beat butter, brown sugar, and white sugar until light and creamy.
  3. Add eggs one at a time, then mix in vanilla.
  4. In another bowl, combine flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture.
  6. Stir in oats, chocolate chips, coconut, and nuts.
  7. Scoop dough into rounded tablespoons and place on the tray, leaving space between cookies.
  8. Bake for 12–15 minutes until the edges are golden and the centers are still slightly soft.
  9. Cool on the tray for a few minutes, then transfer to a rack.

Tips

  • For chewier cookies, chill the dough for 30 minutes before baking.
  • You can add raisins or swap nuts for seeds if preferred.
  • Store in an airtight container for about a week.
