Marinated Cucumbers, Onions, and Tomatoes

🥒 Marinated Cucumbers, Onions & Tomatoes

A refreshing, tangy side dish that’s easy to make and tastes even better after chilling.

Ingredients

2 large cucumbers, sliced
2–3 tomatoes, cut into wedges or chunks
½ red or yellow onion, thinly sliced
ÂĽ cup vinegar (white, apple-cider, or red-wine)
2 tbsp olive oil
1 tsp sugar or honey
½ tsp salt
ÂĽ tsp black pepper
1 tsp dried dill, or 1–2 tbsp fresh dill
Optional: 1 small garlic clove, minced

Method

Place the cucumbers, tomatoes, and onion in a large bowl.
Whisk together the vinegar, olive oil, sugar, salt, pepper, and dill.
Pour the dressing over the vegetables and gently toss.
Cover and refrigerate for at least 30 minutes. For stronger flavor, let it marinate for 2–4 hours.
Toss again just before serving.

Tip: If your cucumbers are very watery, lightly salt them and let them sit for 10–15 minutes, then drain before adding the marinade. This keeps the salad crisp.

Keep refrigerated and ideally eat within 1–2 days for the best texture.
