Old-Fashioned Rice Pudding

This classic rice pudding is creamy, comforting, and made with simple pantry ingredients. It’s delicious served warm or chilled.

Ingredients

  • ¾ cup uncooked white rice
  • 1½ cups water
  • ¼ teaspoon salt
  • 4 cups whole milk
  • ⅓–½ cup granulated sugar (adjust to taste)
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup raisins (optional)
  • Ground nutmeg or cinnamon for garnish

Instructions

  1. In a medium saucepan, combine the rice, water, and salt.
  2. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes, or until the water is absorbed.
  3. Stir in the milk and sugar.
  4. Cook over low heat for 25–30 minutes, stirring frequently, until the mixture becomes creamy.
  5. If using raisins, stir them in during the last 10 minutes of cooking.
  6. Gradually whisk a small amount of the hot rice mixture into the beaten eggs to temper them.
  7. Slowly stir the egg mixture back into the saucepan.
  8. Cook for 2–3 minutes, stirring constantly, until slightly thickened. Do not boil.
  9. Remove from heat and stir in the vanilla and cinnamon, if using.
  10. Serve warm or chill before serving.

Tips

  • For a richer pudding, substitute part of the milk with cream.
  • Short-grain rice produces an especially creamy texture.
  • Add a little extra milk after chilling if the pudding becomes too thick.
  • Top with a sprinkle of cinnamon or nutmeg before serving.
