Old-Fashioned Rice Pudding
This classic rice pudding is creamy, comforting, and made with simple pantry ingredients. It’s delicious served warm or chilled.
Ingredients
- ¾ cup uncooked white rice
- 1½ cups water
- ¼ teaspoon salt
- 4 cups whole milk
- ⅓–½ cup granulated sugar (adjust to taste)
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon (optional)
- ½ cup raisins (optional)
- Ground nutmeg or cinnamon for garnish
Instructions
- In a medium saucepan, combine the rice, water, and salt.
- Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes, or until the water is absorbed.
- Stir in the milk and sugar.
- Cook over low heat for 25–30 minutes, stirring frequently, until the mixture becomes creamy.
- If using raisins, stir them in during the last 10 minutes of cooking.
- Gradually whisk a small amount of the hot rice mixture into the beaten eggs to temper them.
- Slowly stir the egg mixture back into the saucepan.
- Cook for 2–3 minutes, stirring constantly, until slightly thickened. Do not boil.
- Remove from heat and stir in the vanilla and cinnamon, if using.
- Serve warm or chill before serving.
Tips
- For a richer pudding, substitute part of the milk with cream.
- Short-grain rice produces an especially creamy texture.
- Add a little extra milk after chilling if the pudding becomes too thick.
- Top with a sprinkle of cinnamon or nutmeg before serving.
