- 4 large eggs
- 2 tablespoons milk or heavy cream (optional, for extra creaminess)
- 1 tablespoon butter
- Salt and black pepper, to taste

Instructions
- Whisk the eggs
- Crack the eggs into a bowl.
- Add the milk or cream if using.
- Whisk until the yolks and whites are fully combined.
- Heat the pan
- Place a nonstick skillet over low to medium-low heat.
- Melt the butter until it coats the pan.
- Cook gently
- Pour in the eggs.
- Let them sit for about 15–20 seconds, then use a silicone spatula to slowly push the eggs from the edges toward the center.
- Continue gently stirring and folding, allowing large, soft curds to form.
- Remove from the heat early
- When the eggs are mostly set but still look slightly glossy, remove the pan from the heat. The residual heat will finish cooking them.
- Season and serve
- Add salt and pepper to taste.
- Garnish with fresh herbs if desired.
