Ingredients (Makes 4–6)

  • 1 lb (450 g) ground beef or ground turkey
  • 1 packet taco seasoning (or homemade seasoning)
  • ¼ cup water
  • 1 cup shredded cheddar or Mexican-blend cheese
  • 4–6 large flour tortillas
  • ½ cup diced tomatoes
  • ½ cup shredded lettuce
  • ¼ cup diced onions (optional)
  • Sour cream, salsa, or guacamole for serving
  • 1 tbsp butter or oil (for crisping the tortillas)

Instructions

  1. Cook the filling: Brown the ground meat in a skillet over medium heat. Drain excess fat, stir in the taco seasoning and water, and simmer for 2–3 minutes.
  2. Assemble the pockets: Lay out a tortilla. Add a layer of cheese, spoon on the taco meat, then top with more cheese and your favorite fillings. Avoid overfilling.
  3. Fold and seal: Fold the tortilla into a pocket by bringing the sides inward and rolling tightly, or fold it into a half-moon and press gently.
  4. Toast: Heat butter or oil in a skillet over medium heat. Cook each pocket for 2–3 minutes per side, until golden brown and the cheese is melted.
  5. Serve: Enjoy warm with salsa, sour cream, guacamole, or your favorite taco toppings.

Variations

  • Use shredded chicken, pulled pork, or black beans instead of beef.
