Loaded Cheesy Pocket Tacos are a fun, portable twist on classic tacos. Here’s a simple recipe you can make at home.
Loaded Cheesy Pocket Tacos
Ingredients (Makes 4–6)
- 1 lb (450 g) ground beef or ground turkey
- 1 packet taco seasoning (or homemade seasoning)
- ¼ cup water
- 1 cup shredded cheddar or Mexican-blend cheese
- 4–6 large flour tortillas
- ½ cup diced tomatoes
- ½ cup shredded lettuce
- ¼ cup diced onions (optional)
- Sour cream, salsa, or guacamole for serving
- 1 tbsp butter or oil (for crisping the tortillas)
Instructions
- Cook the filling: Brown the ground meat in a skillet over medium heat. Drain excess fat, stir in the taco seasoning and water, and simmer for 2–3 minutes.
- Assemble the pockets: Lay out a tortilla. Add a layer of cheese, spoon on the taco meat, then top with more cheese and your favorite fillings. Avoid overfilling.
- Fold and seal: Fold the tortilla into a pocket by bringing the sides inward and rolling tightly, or fold it into a half-moon and press gently.
- Toast: Heat butter or oil in a skillet over medium heat. Cook each pocket for 2–3 minutes per side, until golden brown and the cheese is melted.
- Serve: Enjoy warm with salsa, sour cream, guacamole, or your favorite taco toppings.
Variations
- Use shredded chicken, pulled pork, or black beans instead of beef.
- Add cooked rice or seasoned beans for a heartier filling.
- Mix in jalapeños, corn, or sautéed peppers for extra flavor.
- Try pepper jack or Monterey Jack cheese for a different taste.
These tacos are great for weeknight dinners, lunches, or game-day snacks, and they’re easy to customize with your favorite ingredients.
