Slow-Cooker Tomato Chicken 🍅

A simple 5-ingredient dinner that’s comforting, saucy, and perfect for those nights when you don’t want to think about what to cook.

Ingredients
4 boneless, skinless chicken breasts
1 can (14–15 oz / 400–425 g) diced tomatoes, with juices
1 packet Italian seasoning
4 oz (115 g) cream cheese
1 cup shredded mozzarella
Salt and black pepper, to taste
Directions
Place the chicken breasts in the slow cooker and season lightly with salt and pepper.
Pour the diced tomatoes over the chicken.
Sprinkle the Italian seasoning evenly over everything.
Cover and cook on LOW for about 4–5 hours, or until the chicken reaches 165°F (74°C) internally.
About 20–30 minutes before serving, add the cream cheese and let it soften.
Stir the sauce gently, then sprinkle the mozzarella over the top. Cover until the cheese melts.
Serve over rice, pasta, mashed potatoes, or with crusty bread.

Tip: Chicken breasts can become dry if overcooked in a slow cooker, so use a meat thermometer rather than relying only on the clock.
