🥔 Mashed Potato Puffs

Ingredients

  • 2 cups mashed potatoes
  • 2 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 2–3 tablespoons chopped chives, green onions, or parsley (optional)
  • Salt and black pepper to taste
  • A pinch of garlic powder or paprika (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a mini muffin tin or line it with silicone cups.
  3. In a bowl, combine the mashed potatoes, eggs, cheese, and seasonings.
  4. Spoon the mixture into the muffin cups, filling them nearly to the top.
  5. Bake for 20–25 minutes, or until the tops are golden brown.
  6. Let them cool for a few minutes before removing from the tin.

Variations

  • Add crumbled bacon or diced ham.
  • Mix in cooked vegetables such as broccoli or spinach.
  • Use Parmesan cheese for a crispier top.
