Ingredients
- 2 cups mashed potatoes
- 2 large eggs
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 2–3 tablespoons chopped chives, green onions, or parsley (optional)
- Salt and black pepper to taste
- A pinch of garlic powder or paprika (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Grease a mini muffin tin or line it with silicone cups.
- In a bowl, combine the mashed potatoes, eggs, cheese, and seasonings.
- Spoon the mixture into the muffin cups, filling them nearly to the top.
- Bake for 20–25 minutes, or until the tops are golden brown.
- Let them cool for a few minutes before removing from the tin.
