Ingredients (Serves 4)
- 300 g pasta (penne, fusilli, or spaghetti)
- 2 cans tuna, drained (about 250–300 g total)
- 2 tbsp butter or olive oil
- 2–3 cloves garlic, minced
- 200 ml cooking cream (or double cream for a richer sauce)
- 100 ml milk (optional, to thin the sauce)
- 50 g grated Parmesan cheese (optional)
- 1 small onion, finely chopped
- Salt and black pepper, to taste
- 1 tsp dried oregano or Italian herbs
- A squeeze of lemon juice (optional)
- Fresh parsley, for garnish
Method
- Cook the pasta
- Boil pasta in salted water until al dente.
- Reserve about ½ cup of pasta water before draining.
- Make the creamy sauce
- Heat butter or olive oil in a pan.
- Cook onion for 2–3 minutes until softened.
- Add garlic and cook for about 30 seconds.
- Pour in the cream and milk, then simmer gently.
- Add tuna and seasoning
- Stir in the drained tuna.
- Add herbs, pepper, and Parmesan if using.
- Simmer for a few minutes until creamy.
- Combine
- Add the cooked pasta to the sauce.
- Mix well, adding a little pasta water if needed to loosen the sauce.
- Serve
- Finish with parsley, extra Parmesan, and a little lemon juice if desired.
Easy Variations
- Add peas, spinach, mushrooms, or sweetcorn for extra vegetables.
- Use cream cheese instead of cream for a thicker sauce.
- Add chilli flakes for a spicy version.
- Top with breadcrumbs and bake for a tuna pasta bake.
Tip: Avoid overheating the tuna for too long—adding it near the end helps keep the flavour and texture better.
